Do you like Japanese "sushi" or "sukiyaki", "yakitori" ?? If so, you taste soy-sauce everyday.
Now, soy-sauce is made from complex biochemistry factory, but highest level one is came from these old brewery.
Look here.. 100 years old brewery. there is no air-conditioner, no sterilization, no computer at all.
Here is only a dark, sultry, rough place, it puts in a barrel and leaves it.
Don't Worry about infection with bacteria.
Originally, the soy-sauce consists of Soybean and bacteria.
