Look here.. 100 years old brewery. there is no air-conditioner, no sterilization, no computer at all. Here is only a dark, sultry, rough place, it puts in a barrel and leaves it. Don't Worry about infection with bacteria. Originally, the soy-sauce consists of Soybean and bacteria.
